Pico de Gallo

“Pico de Gallo, or Salsa Fresca, is the basic fresh uncooked tomato salsa that you’ll use again and again. It’s infinitely superior to any product packaged in a jar and takes minutes to make. Pico de Gallo translates to “Rooster’s Beak.” Nobody knowns the true origins of the name, but given the Mexican’s love of nicknames, I like to think it comes from the chiles “pecking” at your tongue.”
